I had the cereal milk latte that was perfectly balanced and exactly what you would expect when ordering it. I paired it with the gluten free cinnamon roll that didnt make me miss the regular ones, it in fact rivaled some of the best Ive had. The four stars are because the environment is consistently not one I usually associate with.

Decent cup of coffee and oh boy the pastry...sooo good!! Im on my way moving from Portland to San Francisco and Ill say the pastry here still ranks among the best in those two metropolitan cities, while their prices still stay very reasonable.I had a hard time to order because literally I wanted them all. So I got- A breakfast sandwich (bacon and egg in a croissant style pastry) and it is terrific. I dont know how they did it but the bacon and egg are well warmed up while the croissant is still super flaky.- A Bourbon Cardamon Knot that was recommended by a barista and I loved it. A perfect combination of sweet, savory and texture.- A Kouign Amann which scores high in both the look and the taste.Thats 3/3 and I feel like you just cant go wrong with the pastry here.The store opens pretty early and has lovely seatings both inside and outside. Its actually a coffee roaster plus a bakery, both are in-house which is super cool. Overall I had such a wonderful experience, I will be stocked to come back whenever I pass Redding again.

Coffee is very good, strong with bold flavors. I tried their butter beer soad coffee which was very different. Wouldnt recommend it though. Carbonation in coffee is just not my thing I guess. Otherwise, no complaints. Great little coffee shop.

For someone that love to visit coffee shops to work remotely for a few hours, Theory Collaborative is on the top list. They roast their own coffee and then serve it in the next room. The vibe was created with a chill environment in mind. Coffee was really delicious. My girlfriend loves a great flat white and always get disappointed by coffee shops. But Theory Collaborative did not.

Elevated coffee experience. I wish there was one in every city! The coffee is not bitter at all and I really enjoyed the seasonal drinks. The space is also inviting, clean, and modern.

Pretty good place. Sometimes its really relaxed, others its over packed and super trendy. They dont have lot of great drinks you might look for but they have at least one thing for everybody. Good tea. Plus 1 for their good gluten free cinnamon rolls, thats what brings me in the door.

I came in recently with my two kids and baby and we were greeted with warm welcomes which started off our wonderful experience here. The environment was friendly and welcoming. Their menu is simple and easy to understand. The drinks are superior to any coffee chain I’ve tried and it made me realize that I’ve been missing out for a long time. You can tell they put in a lot of time and effort to create products people will enjoy. We also got a cinnamon roll that was delicious. Everything was very fairly priced and the staff was so friendly! Its no wonder this place has nearly 5 stars and tons of reviews. I can’t wait to go back.

The worst service ever, if they dont think you go to Bethel they dont bother with you. They had me standing waiting for over 30 minutes for a latte when MANY people had come in and recieved their drinks before me. At first I didnt think much about it but after a while it became obvious they just kept pushing my order back further. So disappointing.

Theory has incredible espresso drinks. I just ordered an iced oat milk latte—it’s amazing! Smooth, creamy, and the flavor of the espresso is nutty and delicious!

I went here for the first time on a Sunday afternoon. The place is pretty open and nice. The staff was super helpful with any questions about the menu that I had. I had a dirty chai while I studied and then before I left i grabbed a lemon ginger kombucha to go. The chai latte was soooo delicious and perfect. The kombucha I was informed is brewed in house and was seriously amazing. I cant wait to come in again and try the other flavor and see if they have made anything new. It was a little crowded but hey it was a Sunday after church so I bet it is a nice mellow study spot during the week.

So far so good. It was nice to find a coffee shop that offers indoor dining so I could get some work done. Not sure if others do right now or not, but this place kept their Google listing updated - much appreciated. Aside from the food, they have beautiful Claro walnut tables.

Best coffee north of Santa Cruz. Maybe anywhere. And the people are great! Super friendly and experienced baristas. Atmosphere and location is also cool. Lots of indoor and outdoor seating.

Its disappointing the store does not do more to emphasize social distancing practices in order to set an example for the safety of others. Quite disappointed in the fact everyone inside was within 6 ft of each other, nobody was wearing a mask (whether they were consuming substances or not), and even some of the staff members were wearing the masks incorrectly. The drinks were also not very good and the food was mediocre.

The affogato was wonderful. It was a little warm in the building. But what a beautiful gem of a place. It has been there 4 months and we had no clue!! Will definitely go back.

Fantastic coffee, really great service. Had a great talk with the Barista, learnt about coffee and different ways to brew. Would recommend the coffee shop.However, I checked the opening times online and on the doors, which both said 8pm. I got there at 5.30, and bought a coffee, only then to be told they are closing at 6pm. Not the end of the world, but an inconvenience. Would give 5 stars, but just wanted to warn others to check the times.Still - beautiful coffee though.Thank you for the reply - have changed to 5 stars now, for the confirmed hours and reply.

Another reviewer posted the coffee was watery, I thought to myself she must be crazy, NOPE, Im not sure how she did it but it was bad, but it was hot, it was cold outside so I drank it untill it went cold. I also got a meat quiche, which was mostly hashbrowns with the tiniest bit of meat in it. The GF cinnamon roll was good, but they couldnt tell me if it had soy or corn in it, as I have many food intolerances. It was VERY sweet, but tasty. All in all very disappointed in this place.

Always a great espresso/latte from Theory, they also have Edens Bakery here too. Im usually getting a double shot of something and at least one baked good. Always Fantastic!!!

Favorite place in town. The people who work here are always smiling and friendly. Pastries from Roof are unique and delicious and the coffee itself is to die for. Beautiful space and vibe. Cant say enough good things.

The best expresso !! Its a specialty coffee shop and one of the best coffee shops in Redding. The baristas are excellent and there is nothing better than asking them for the Recommendation of the Day. Take some time for yourself and let yourself be carried away by Theory coffee from Ethiopia.

Heres the deal: if your baristas dont know the answer to something, they probably shouldnt make something up. Asked what the difference between honey process and natural, the barista in complete seriousness said that the coffee was soaked in honey before it was dried. Seriously? I can easily google the answer, but I wanted to actually engage in the barista. So much for that. The baristas bullsh1ting doesnt end there.The cashier was fine. The milker dude was fine. The cappuccinos I ordered looked pretty. But the barista making the spro, bro, pours some pretty unacceptable espresso. Ashey, carbony, and burnt leather is what came into my cup, complete with a pretty little design.The muffins are good, wifi is good, seating areas awesome. Mask policy not enforced.Bottom line / TL,DR: the barista making espresso isnt cutting it with dialing in and with his bsing.

I love this place. I’m giving it 5 stars based on my overall experience here. I come often and have had good experiences every time with the exception of getting a watered down iced coffee once. The iced coffee experience didn’t ruin my experience at all because the place just makes me so happy! The vibe and atmosphere is amazing. It is well lit and a great place to read or study. My favorite drink is a hot oat milk latte with honey. I have also had the avocado toast. It is so good! They put greens on top and it’s not just your basic toast. The banana bread is great. The gluten free cookie is an average gluten free taste (take what you want from that haha!) Everyone is friendly. If you get lucky you can watch the beans roast as they have the roaster in a room next to a window where you can sit at the bar and watch the life of coffee roasters in action :)

Theory: an established repeatable experience; this shrine to Ethiopian coffee is a beautiful experience. An eclectic gathering of friendly loving patrons mostly younger crowd, seating can be a challenge, Theory ebb and flows; Lattes need to be bigger and hotter so good I could gulp it down wishing for a bottomless cup but try too savor, I never can. I’ve had some time to kill this past week and there’s no better place to do that than in a coffee shop. I’ve tried three different drinks there and all of them were delicious. I was really impressed with their gluten free cinnamon buns as well. Often, amazing coffee shops have slightly snobby baristas. It’s a thing. But that has not been my experience here. They have been patient and kind, genuine and attentive, asking what’s up with my day and offering recommendations. They’re efficient too! The atmosphere is aesthetically perfect and I love the thriving plants that warm up the more mid-century modern vibe. Thanks theory!

Best coffee in Redding by far. I am surprised that the prices are still so reasonable considering the quality they put out. This is the shop to buy your coffee from, for home use as well, if you prefer high quality coffee. They offer wonderful cafe food items too. I cant say enough about the quality of their food. The shop is clean and well kept. The staff is attentive and kind. It is perhaps not the ideal for large groups or intense studying. This is a beautifully bright, open, little coffee shop where you can meet a friend or two. The outside tables are another option to enjoy on a nice day. I would highly recommend this establishment.

The Theory Collaborative. Very minimalist interior but a good amount of seating. Today we got a hot Latte and Mocha with a chocolate croissant and a ham and gruyere cheese croissant. All their baked goods are from Tin Roof! And thats our favorite! Coffee was delicious and pastries were spot on. We were greeted by a nice man who gave us a couple free sample shots of the kombucha that they had on tap. Turns out he was the husband of the wife who makes it and it was good and Ive never tried it before. It was a nice experience overall. Coffee made with love! Food is great! Will be back very soon. Id say the only thing missing would be some art on the walls! It would be great to see local art go support the community and maybe even have a chance to buy! Thanks for reading! 🌸

Amazing to see a small shop thats focusing on single origin ethically sourced coffee. Ordered the hot americano. The espresso was smooth and deep and had lingering citrus notes that left me wanting more. They offer online ordering will order direct because Im from out of town. Keep up the great work.

First, I love the ginger beer and espresso drink. Also their regular drip and iced coffees are fantastic. Anytime I go in I usually go with a black coffee and enjoy a refill (which is a perk) while hanging out. Oh, and I love the atmosphere - its hip and fresh without being intimidating. Which can be a challenging feat in specialty coffee shops!

Theory is known to have the best coffee in town! They roast their own beans and have one competitions on a national level!This is also a great environment to do work or have 1-on-1 meetings. There are multiple rooms and tables so there is almost always an open spot to sit down and do some work.

I’m always so happy with my drinks at theory. The quality is amazing and the atmosphere is upbeat. Not only is their coffee amazing, but they have a great selection of wines and beers for the evenings.
